Herat is the center of LAVIAAN’s saffron story. The region’s farmers cultivate Crocus sativus, the flower from which saffron is harvested.

Each flower produces only three delicate stigmas. These threads must be separated from the flower and carefully dried, making saffron cultivation highly dependent on skilled manual work.

What Does “All-Red Saffron” Mean?

A saffron thread consists of a crimson-red stigma that may remain attached to a paler yellow or orange floral base.

The red stigma is the valued portion associated with saffron’s characteristic color, aroma and flavor. Lower-quality products may contain more pale floral material, broken plant matter or other substances that add weight without providing the same saffron character.

When examining saffron threads, look for:

How to Enjoy Afghan Saffron

For a simple saffron tea or infusion:

  1. Place 9–12 saffron threads in a cup.

  2. Add hot—but not vigorously boiling—water.

  3. Steep for at least three minutes, until the water begins turning golden.

  4. Add honey or lemon if desired.

For cooking, gently crush and bloom the threads in a small amount of warm water, milk, or broth before adding them to rice, sauces, soups, or desserts.
